This chapter summarises recent advances in solid-state, HR-MAS and solution-state NMR techniques to study the structure and dynamics of soft matter systems. Original research articles published between March 2020 and March 2021 are discussed. Despite the global pandemic, significant advances have been made in the analysis of gels, liquid crystals, polymers and surfactants. This chapter focusses on the NMR methodologies themselves in the hope of stimulating new areas of research between the traditional branches of soft matter.
